

Zucchini & Potato Patties

What we need (Ingredients)

2 zucchinis

2 potatoes

1 carrot

A bit of chopped parsley (like green confetti!)

2 eggs

3 tablespoons breadcrumbs (breadcrumb magic!)

12 mini mozzarella balls (mozzarelline)

Salt, freshly ground pepper, and a pinch of nutmeg
Let’s get started – Step by step
- Wash & Grate: Mom gives the zucchinis a good wash, and then you get to grate them using a coarse grater – careful with your fingers! She’ll also peel the potatoes and the carrot for you, then those get grated too.
- Veggie break time: Toss all the grated veggies into a big bowl. Sprinkle a little salt and let it rest for 5 minutes – the veggies will start to “sweat” a bit
- Squeeze it out! Time to get squishy! Squeeze the veggie mix with your hands to get rid of extra water – little hands are perfect for this!
- Mix it up – no cheese yet! Now add the eggs, breadcrumbs, parsley, pepper, and nutmeg. Mix everything together well with your hands – it’s like playdough!
- Shape it up: Form small balls or flat patties from the mixture. Hide one mini mozzarella ball inside each – like a cheesy surprise treasure! Seal it up well.
- Into the pan: Mom heats a bit of oil in a pan. Fry the patties slowly on both sides until they’re golden and cooked through – it takes a little patience!
